Today I’ve got an awesome breakfast recipe for you! If you haven’t seen this recipe before, know that I didn’t create it myself from scratch. I’ve seen a few variations of this recipe floating around on the interwebs, but I thought I’d share my version of it in case you wanted something new. Or if you haven’t seen any versions of it before, then you could try my version and see if you like it (or just pretend that I made it up haha!).
This is a great breakfast or lunch (or really anytime meal) option. Full of veggies and healthy carbs as well as protein and healthy fats. It has it all! I even like to add a little spice to this hash with jalepeño and cumin. It’s super easy to make it ahead of time and eat it throughout the week. Even the hubs and the babe approve of it! I call that a win win!
You could even take it up a notch and put it on some toast! How yummy would that be?! Hope you enjoy this quick, delicious breakfast!
