Snickerdoodle Bites

Snickerdoodle bites?! That are healthy?! Count me in! I’m sure you’ve all seen various forms of delicious bites like these. They’re great for on the go snacks or quick one-handed snacks if you’re carrying around a fussy baby (not that that was me this past week or anything…)

I’m a big fan of one-handed snacks these days #2kids. However, a lot of the store bought snacks are full of processed ingredients, food dyes, and they rarely keep me full past an hour. I love little bites like these because they’re easy to grab a few while heading out the door or just grab real quick when you need an afternoon pick me up. With less than 2g of sugar per bite plus a secret ingredient that adds extra fiber to keep you full, these snickerdoodle bites are sure to be a family hit and a great snack. Added bonus–they’re gluten and dairy free too!

They only take about 10 minutes to make and you can mix the whole thing up in a blender or food processor. How easy is that?!

Start with a cup of rolled oats and blend or process for about 60 seconds until a fine powder forms. Next add the secret ingredient…chickpeas! Say what the what…yep, chickpeas not only provide the texture that helps hold these little bites together, but they also provide extra fiber that will help you stay fuller, longer. You add the chickpeas (1 can drained), cinnamon, brown sugar (only 2 tablespoons for the whole batch!), almond milk, vanilla & almond extracts and process! It’ll start to come together in 30-60 seconds and start to look like cookie dough consistency.

Bonus: vegan ingredients means you can just scoop this cookie dough out with a spoon. YUM!

If the dough is not quite firm enough to roll into balls, put it in the freezer for about 10 minutes. Then roll into 20 little balls. Store them in an airtight container and enjoy throughout the week!

  1. Pour oats into food processor and process on high for 60 seconds or until the oats are a fine powder.
  2. Add the remaining ingredients and process until cookie dough-like ball forms.
  3. Roll batter in 20 equal balls. (If batter is too loose to roll into balls, place in freezer for 10 minutes until firmer). Enjoy!
