  1. Pat fish fillets with paper towels and salt each side. Set aside.
  2. Heat oil in shallow pan. Once heated, add shallot and garlic and cook until aromatic (30 seconds – 1 minute).
  3. Next add the fillets and sprinkle with 1/4-1/2 teaspoon rosemary. Cook until 1st side is done.
  4. Gently flip the fish away from you, and sprinkle 2nd side with rosemary. Cook until fish reaches an internal temperature of 145 degrees
  5. Serve with roasted veggies & potatoes.
