Happy Friday! Today’s recipe happened by chance this week while watching a neighbor’s little girl. Madeleine’s friend wanted to make cookies, and wanting to try a healthier version I turned out these! They only take 5 ingredients and 20 minutes to make. The girls helped with the whole process and they were super easy.
This is a great recipe to let kids help out. It might get messy but they enjoy it and it’s great to get this in the kitchen and help them learn about measuring, ingredients, and really enjoy the process of making food. You can measure out each ingredient and have the kiddos pour it in.

First, place the oats in the food processor and blend until the oats are broken down but not quite a powder. Add in the banana, peanut butter, and vanilla extract and blend until uniform. Mix in the chocolate chips until a ball in the processor starts to form.
Form the dough into cookie rounds, and place on a cookie sheet lined with parchment paper. These cookies don’t expand in the oven, so be sure to press them down a little into a cookie shape. You can keep them thick though because those are the best kind, right?!

You could add any other things you like with this mixture of flavors. You could add dried fruit, cinnamon, switch out peanut butter for your favorite other nut butter. You could also add flaxseeds or chia seeds. Whatever you like!

- 2 cups oats
- 1 ripe banana
- 2 tablespoons creamy peanut butter
- 1 teaspoon vanilla
- 1/4 cup mini chocolate chips I used Enjoy Life allergen friendly chocolate chips

- Place the oats in a food processor and blend until broken down but not into a find powder.
- Next, add the banana, peanut butter, and vanilla and blend until a the mixture starts to bond together and look like cookie dough.
- Add in chocolate chips and pulse until the chocolate chips are incorporated.
- Roll into balls and place on baking sheet lined with parchment paper. These cookies don't expand, so press them down into a cookie shape before baking.
- Bake at 325 for 12 min and enjoy!
